Miriam Weiskind is also leaving her mark on Portland’s dining landscape with the upcoming launch of Yum’s of PDX on SE Eighth Avenue. After gaining widespread attention for her Neapolitan-style pizzas during the pandemic, Weiskind will now serve gourmet pizzas, including both cold-fermented Neo-Neapolitan pies and thick wood-fired Sicilian styles. Now, the establishment is expanding its offerings by launching Living Room Coffee daily at 7 a.m. This new café will serve specialty coffee drinks and delectable breakfast options, including burritos and housemade syrups. Meanwhile, the current location in Kerns will transition to Peter Cat, transforming into a private event space and exclusive izakaya-style bar.
As Portland’s culinary scene continues to flourish, the opening of L’Echelle stands at the forefront, generating considerable excitement despite the recent loss of its founding chef, Naomi Pomeroy. The restaurant initially showcased a range of locally inspired French dishes during its pop-up earlier this year. Though Pomeroy is no longer at the helm, her influence will remain as Mika Paredes, a close friend and collaborator, takes over as executive chef.
