Exciting New Culinary Offerings Across Local Establishments

A wave of culinary innovation is sweeping through local restaurants, with several establishments unveiling revamped menus and seasonal offerings designed to delight food enthusiasts this summer.

Urban Hill, renowned for its distinct and elevated dining experience, has recently launched an impressive new menu following a successful collaboration with Tyson Peterson from Mar | Muntanya. Chef Nick Zocco, a James Beard-nominated chef, has pushed the boundaries of creativity with significant updates to both the appetizer and entree selections.

New appetizers now feature vibrant dishes such as ceviche bathed in tomatillo and habanero with a coconut-lime dressing, served alongside crispy tortilla chips. Other vibrant starters include BBQ oysters with nduja butter and scallions, grilled calamari with Spanish chorizo and yuzu-saffron aioli, as well as crispy pork belly accompanied by parsnip purée and golden raisin agrodolce.

In addition, the menu introduces refreshing options, such as Caputo’s burrata toast layered with rhubarb compote and peppercorn honey, steak tartare with confit egg and malt vinegar chips, and a smoked beet salad featuring farm greens and goat cheese.

On the entree side, Urban Hill hasn’t held back either. Diners can indulge in fire-roasted maitake mushrooms served with za’atar spiced cous cous and turmeric-cashew cream, or opt for roasted chicken with asparagus and toasted gnocchi. Seafood lovers can look forward to golden eagle black cod accompanied by fregola sarda and a gochujang-citrus glaze, while meat lovers might enjoy the Iberian “tomahawk” pork chop delicately paired with foie gras bordelaise and grilled pineapple salsa.

For pasta enthusiasts, the strozzapreti with Calabrian chili sugo and basil pistou promises a delightful twist, and the lamb porterhouse chops garnished with farro risotto and a pickled chili red wine reduction provide savory indulgence. Furthermore, chef Zocco is gearing up for another exciting collaboration with Manoli Katsanevas of Manoli’s, scheduled for July 16th, an event diners won’t want to miss.

Another local favorite making seasonal changes is Vessel Kitchen. This establishment is rolling out new highlights across all its locations, showcasing dishes such as the Godfather salad with diced chicken breast and arugula, alongside a flavorful Tuscan chop featuring radicchio and mozzarella dressed in a zesty vinaigrette. This update marks a continued commitment to providing fresh and vibrant eats that resonate with the changing seasons.

Meanwhile, Flanker Kitchen & Sporting Club is keeping things fresh in the cocktail department with three new summer-ready drinks introduced at their Hidden Boot popup bar. The drinks include a refreshing Strawberry Fields cocktail featuring Mi Campo Tequila, Italicus Liqueur, and strawberry purée; a Pistachio Rum Tini made with Captain Morgan Spiced Rum, crème de cacao, and Frangelico; and a Garden Bliss, which blends Alpine Gin with St-Germain and strawberry-basil-honey syrup.

Not to be outdone, St. Regis has launched an exquisite Sunday brunch experience at their Deer Valley resort, running from 11:00 a.m. to 3:00 p.m. Guests can partake in a lavish buffet featuring a seafood station with king crab legs, oysters, and jumbo shrimp, along with a carving station offering grilled or smoked meats. Sweet pastried treats and tapas-style small plates, including options like eggs benedict and chicken and waffles, complement the mouthwatering feast.

This premium brunch offering is priced at $85 per person, while children 12 and under can enjoy it for $30. Moreover, St. Regis has special local ID-required offers throughout the week, such as a St. Regis beer and burger deal on Tuesdays and 20% off meals on Wednesdays and Thursdays at select dining venues.

At Grand Hyatt Deer Valley, an eagerly anticipated new menu has debuted at the Sunspell Pool + Provisions, sprawling over 7,000 square feet of terrace space with breathtaking views of the Wasatch. Open daily from 7:00 a.m. to 10:00 p.m., the menu features light bites ideal for poolside snacking, ranging from poke and salads to sandwiches, all accompanied by inventive cocktails crafted by Water Witch, a recent James Beard Awards finalist.

The Distillery has resumed its Sunday brunch which showcases a buffet loaded with a wide array of selections including hot and cold dishes, desserts, and seasonal cocktails from 10:30 a.m. to 2:30 p.m.

The Nelson Cottage will also host a Summer Dinner Series on selected Fridays and Saturdays, complete with a welcome cocktail and a buffet meal, with reservations and menus available through Tock. Additionally, the Cottage will hold prix-fixe dinners from Wednesday to Sunday, featuring an optional whiskey pairing alongside an introductory lesson from High West’s Cottage Whiskey Ambassadors.
