Portland Bars Shine as Finalists in Spirited Awards

Two renowned bars from Portland are making headlines as finalists in this year’s Spirited Awards, an event often regarded as the Oscars of the cocktail industry.

Pacific Standard, situated in the KEX Hotel, is in the running for Best U.S. Hotel Bar, while Palomar, a Cuban-inspired establishment that has recently relocated to Northwest Portland, is up for Best U.S. Restaurant Bar.

The Spirited Awards, which will be held in New Orleans on July 24, celebrate excellence in bars and mixology across the globe.

Joining us for discussions on their nominations, as well as the cocktail industry’s evolution, are Jeffrey Morgenthaler from Pacific Standard and Ricky Gomez from Palomar.

Jenn Chávez, host of “Think Out Loud” on OPB, kicked off the conversation by asking Jeffrey to paint a picture of the ambiance at Pacific Standard.

Jeffrey described the bar’s vibrant setting, located at the bustling intersection of MLK and Couch. He illustrated an inviting atmosphere with floor-to-ceiling windows, a central circular bar, plush leather couches, and a warm ambiance characterized by a buzz of excitement.

Ricky was then asked about Palomar’s vibe. He described a beautifully designed bar that embodies Miami Art Deco influences, with large glass windows that open up to the breezy streets of Northwest Portland. The decor features vibrant colors reminiscent of Cuban culture, combining elements of his family’s history with a lively and energetic atmosphere.

Chávez further probed Ricky on how his Cuban heritage influences the food and drink offerings at Palomar. Ricky explained that while rum was a significant part of their cocktail menu, they also feature a variety of spirits, including agave, while emphasizing a balance in their drink offerings.

His dishes reflect a combination of Cuban and Mexican influences, showcasing a diverse menu. This includes traditional items such as braised pork shoulder, complemented by modern interpretations of classic cocktails.

Shifting focus back to Jeffrey, Chávez inquired about the unique qualities of managing a hotel bar.

Jeffrey shared that successful hotel bars typically blend local regulars with international visitors, creating an exciting and dynamic clientele. He expressed his enjoyment of this diverse environment, emphasizing the unique energy it brings.

As an esteemed bar mentor, Jeffrey was asked to describe his approach to mentorship.

He reflected on his long career in the industry, which began in Eugene in 1996. Through sharing knowledge and experiences online, he has fostered connections with fellow bartenders and enthusiasts, demonstrating his commitment to nurturing the next generation of mixologists.

Ricky then discussed the challenges faced during Palomar’s recent relocation from Southeast to Northwest Portland. He highlighted the risks involved in moving to a new area while enduring financial struggles after the pandemic.

Despite these challenges, Ricky expressed confidence in their decision to move, as the new location offered higher foot traffic and potential for growth.

The transition involved a significant renovation, completed in just seven weeks, demonstrating their commitment to creating a new, inviting space for patrons.

Both Ricky and Jeffrey shared reflections on the impact of the COVID-19 pandemic on their businesses and the bar industry at large.

Jeffrey candidly recounted the difficulties created by uncertainty during the pandemic, losing two bars he had nurtured for over a decade. However, he described how the opportunity to open Pacific Standard revitalized his passion for the industry.

Ricky added that the pandemic served as a reset for Palomar, allowing him to redefine their business model to adapt to evolving customer expectations, transforming it from a bar-focused venue to one that equally prioritizes food.

As their conversation drew to a close, Chávez congratulated both of them on their nominations and the journey they’ve taken together as peers in the bar industry.

The recognition they received at the Spirited Awards reflects their dedication and passion for their craft.
