Pizzaiolo-owner Michael Vakneen is celebrated for his continual quest to explore the possibilities of dough, focusing on aspects such as crisp, chew, crumb, char, and body.
General manager Erica Bell, who trained under Vakneen, has made necessary dough refinements that retain the character of the pizzas while allowing for takeout and delivery — a crucial adaptation that was previously challenging due to the perishable nature of the dough.
