Chef Juan Raigosa Chavez embodies the American dream through his incredible 40-year culinary journey.
Originally from Zacatecas, Mexico, Chef Juan migrated to the United States in 1985 and has built a legacy through hard work and a passion for cooking.
Starting as a dishwasher at Marix Tex Mex Café in Hollywood, his dedication and strong work ethic quickly propelled him up the kitchen hierarchy.
Chef Juan’s rise in the culinary world included roles as a food prep worker, cook, and eventually kitchen manager.
His exceptional skills led him to create diverse menus and dishes and gain recognition in the restaurant industry.
Thanks to the owners of Basix Café, he received culinary school training—an opportunity that further enhanced his expertise.
However, the global pandemic brought significant challenges as both Marix and Basix closed, impacting many workers, including Chef Juan.
During this tough time, Chef Juan faced a two-year layoff that ended when he uploaded his resume online.
Within three days, he was hired as the chef at GymBar WeHo, thanks to his growing reputation in the community.
“I became a little famous,” Chef Juan remarked, acknowledging the support he received from his previous patrons.
His friendly and welcoming demeanor means many regularly greet him, a symbol of his strong presence within the LGBTQ+ community.
As he continues at GymBar, patrons are eager for Chef Juan to recreate some of the beloved dishes from his earlier years.
Chef Juan’s favorite part of his current role is the freedom to create and elevate traditional recipes from his cultural background.
His reputation as a sought-after chef speaks volumes about his heartwarming attitude and commitment to culinary excellence.
“Many people have sought me since I started here,” he said, indicating the strong community ties he’s nurtured through his work.
He believes that building relationships with new customers starts by understanding their favorite dishes, helping him offer enticing culinary experiences.
Chef Juan ensures the quality of his food by personally training each staff member who works under him.
“It’s about doing everything with love so it comes out perfect,” he emphasized, revealing his deep commitment to quality and the importance of mindset in cooking.
Reflecting on his career and the legacy he’s built in the LGBTQ+ community of West Hollywood, Chef Juan expressed how much he values his local neighborhood.
“I love my people of West Hollywood, my neighborhood, and for me, it’s all normal,” he stated.
Throughout his four decades in the culinary world, Chef Juan has contributed to a sense of community and inclusivity that is vital amid ongoing challenges.
Currently at GymBar, which is managed by a couple of executives from the Dodgers organization, Chef Juan continues to thrive.
As a passionate Dodger fan, he has even participated in cooking demonstrations at Dodger Stadium, showcasing his culinary prowess on a broader stage.
Additionally, GymBar WeHo is one of the few locations outside Dodger Stadium that offers the authentic Dodger Dog.
With baseball season underway, Chef Juan invites everyone to join in for a game and try a Dodger Dog, celebrating the joy of community through food.
