The Rangoon Bistro team is expanding its culinary footprint with the upcoming opening of Bone Sine, a sister operation located on Mississippi Avenue. Scheduled to open on Thursday, July 17, this new establishment promises to offer a punchy menu crafted in collaboration with Tyler and Devon Treadwell of Tulip Shop Tavern, making it a perfect match for drink pairings.
The name Bone Sine pays homage to the discreet taverns of Burma from the 1940s to the 1970s, which served as clandestine spots for socializing with shared drinks and snacks. The food being offered at Bone Sine, however, is no mere afterthought; the chefs behind Rangoon Bistro are experienced professionals who have honed their skills in Michelin-starred kitchens.
The menu at Bone Sine aims to provide an upscale yet comforting dining experience. For instance, bar nuts will come enhanced with lime leaf, shan spice, brown sugar, and butter. The flavors that Rangoon Bistro is known for—intense spiciness and deep saltiness—will be elevated to new heights at Bone Sine, catering to enthusiasts of Southeast Asian drinking food. According to David Sherbo, one of the co-owners, this is how he and his partners truly enjoy seasoning their own meals.
Diners will find bold flavors such as assertive bitterness and acidity, showcased in signature dishes like lahpet htamin—fermented tea leaves and fried egg on rice—which is expected to take center stage on the menu. Patrons can also look forward to enjoying the full Rangoon Bistro menu, thanks to the shared kitchen arrangement between the two venues.
In terms of beverage offerings, Bone Sine intends to feature classic cocktails that integrate Burmese ingredients with local spirits sourced from Tuff Talk Distillery. The owners envision a setting where friends can pool their resources to share dishes and drinks equally. This communal experience echoes the pay-what-you-can initiative the Rangoon team previously offered while operating as a farmers market.
The location of Bone Sine was formerly home to Blue Star Donuts. When this property hit the market, Sherbo and his team seized the opportunity, deciding to take over the lease rather than merely expand seating at Rangoon Bistro. This acquisition allowed them to create something distinct. “That’s when we decided we should revamp the bar program, give it its own menu, and treat it like its own special thing,” Sherbo explained.
Rangoon itself has undergone significant growth since its inception as a pop-up in 2017, ultimately becoming a full-service restaurant in 2022. Looking forward, the team plans to introduce DJ nights on weekends and breakfast viewing parties featuring Arsenal games in the early morning hours, as a nod to the camaraderie that initially formed among the owners over their shared love for the football club.
As the opening date approaches, Sherbo expresses confidence in the team’s preparedness. “The food is dialed in,” he states. “I think Tulip Bar is the best bar in the neighborhood. Getting that quality of drinks is going to improve the overall experience.”
Bone Sine will operate from 4 p.m. to midnight on Thursdays and Sundays, and from 4 p.m. to 1 a.m. on Fridays and Saturdays, located at 3753 N Mississippi Avenue.
