Located in the former Picasso space at the Bellagio, which had long held a place in the hearts of diners, Carbone Riviera aims to revolutionize the coastal dining experience.
MGM Resorts International has remained tight-lipped about the project’s estimated $16 million cost, following the closure of Picasso after more than twenty-five years under the leadership of celebrated chef Julian Serrano.
Chef Mario Carbone, co-founder of Major Food Group (MFG), described the restaurant as not just a culinary venue but a significant responsibility and honor, stating, “This is without exaggeration one of the most important, not to mention gorgeous, restaurant spaces in America.
